The moscato di saracena grapes picked at full ripeness are dried by leaving them undee the scorching semptember sun for about 30 days according to the ancient tradition.

Then comes vinification. The short contact with the skins and the slow fermentaton complete the wine’s development for several month’s in small oak barrels
